Ingredients


Makes: 4 servings
  • 3 Tbsp (45 ml) Guacamole Dip Mix
  • 1 ripe avocado, mashed
  • 1 C (250 ml) light sour cream
  • 1 Tbsp (15 ml) lemon or lime juice
  • 2 cans (4 oz/120g) light tuna
  • 4 C (1 L) cooked brown rice
  • 3/4 C (180 ml) low-fat marble cheese

Preparation


 
  • Preheat oven to 400° F (205 ° C).
  • Combine first 3 ingredients in a large mixing bowl and mix well. Add remaining ingredients (except cheese) and stir to combine.
  • Transfer to oven-safe casserole dish and top with cheese. Bake for 30-40 minutes, or until warmed through and cheese is bubbling. Serve warm.
  • Tip: Serve with steamed frozen or fresh seasonal vegetables.
