1 can (14 oz /398 ml) black beans, drained and rinsed
1 can (12 oz/341 ml) corn, drained
1 medium tomato, chopped
3 tbsp lemon or lime juice
2 tbsp olive oil
1 small red onion, chopped
- In a medium bowl, combine first 7 ingredients.
- Heat frying pan over medium heat. Add oil and onion, and sauté for 2 minutes.
- Add remaining ingredients, stir, and gently warm for approximately 5 minutes.
