Ingredients


Makes: 4 - 6 servings
  • 2 C (500 ml) shredded, cooked turkey
  • 1 red pepper, seeded and diced
  • 1 green pepper, seeded and diced
  • 2 C (500 ml) grated Monterey Jack or cheddar cheese
  • 2 tsp (10 ml) Fajita Seasoning, or Taco Seasoning, or Louisiana Hot & Spicy Dip Mix
  • 1 pkg 8” flour tortillas

Preparation


 
  • Preheat oven to 400 °F (205 °C).
  • Combine turkey, peppers, cheese and Fajita Seasoning.
  • Place half the tortillas on a Sheet Pan lined with a Bake & Roll. Divide filling among tortillas. Top each with second tortilla.
  • Bake 8 minutes, turn over and bake an additional 8 minutes, or until lightly golden and cheese is melted.
  • Tip: Serve with prepared Epicure Salsa, Epicure Guacamole and sour cream.
